Spinifex Lucette 2023 (500ml) prosper-maufoux and Jean Baumard and nowLucette is something of a unicorn in the Spinifex range. This is just the second release in 10 years. Lucette is a cane cut Semillon, whereby the vines canes are cut just before harvest, stopping the supply of water to the bunches and resulting in the berries shrivelling on the vine. Sugar levels rise as water is lost through the skins, but acid and flavour levels remain high. Pete gets his Semillon from two very old Semillon sites in Kalimna. The
